These Honey and Apple Muffins are soft, fragrant, and delicately spiced, with a hint of floral sweetness from the THREE BEES Honey Infused Gin. The gin adds depth to the honey flavour, enhancing the natural sweetness of the apples. Each bite brings together moist, tender crumb with bursts of juicy apple and subtle hints of warm spices. Perfect for breakfast, an afternoon snack, or as a sweet pairing with a cup of tea, these muffins are a delightful treat for any time of the day. The gentle balance of honey and gin makes them just a bit unique, adding a sophisticated twist to a classic muffin.

Ingredients:

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/2 cup unsalted butter, melted

  • 1/2 cup honey

  • 1/4 cup THREE BEES Honey Infused Gin

  • 1/4 cup brown sugar

  • 1 large egg

  • 1/2 cup plain Greek yogurt

  • 1 tsp vanilla extract

  • 1 1/2 cups diced apples (preferably a sweet-tart variety like Honeycrisp)

  • Optional: 1/4 cup chopped walnuts or pecans for added crunch

Instructions:

  1. Preheat the Oven: Set your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

  2. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

  3. Prepare the Wet Ingredients: In a large mixing bowl, combine the melted butter, honey, THREE BEES Honey Infused Gin, and brown sugar. Whisk in the egg, Greek yogurt, and vanilla extract until the mixture is smooth and well blended.

  4. Mix in the Apples: Gently fold the diced apples (and optional nuts) into the wet mixture, ensuring they’re evenly coated.

  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix, as this can make the muffins dense.

  6. Portion and Bake: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.

  7. Cool and Enjoy: Allow muffins to cool in the tin for a few minutes before transferring them to a wire rack. Enjoy warm or at room temperature!
