Bee’s Knees Cocktail
This is an easy to make simple cocktail with a bit of zing! The addition of the Harborough Honey slightly sweetens the kick from the fresh lemon juice. You could say this is an outstanding cocktail as its the “Bee’s Knees”. Overall this is a refreshing, brightly flavoured, slightly sweet drink, that is delightful to drink.
To be served in: Cocktail Glass or Coupe Glass

Ingredients

50ml THREE BEES Honey Infused Gin

25ml Lemon juice (freshly squeezed)

2 Tsp Harborough Honey (Clear)

10ml Orange Juice (freshly squeezed) – Optional

1x Lemon slice / strip to garnish

Caster Sugar for cocktail glass (optional)
Method

Optional Initial Step
If you would like a sugared edge to your cocktail glass like the photo. Using the juice of a lemon or the fleshly part, rub it round the rim of the glass to wet it. Make sure its wet enough. Alternatively dunk the glass rim in some water. Simply take the upside down glass, dip it in a bowl of sugar. -
Step 1
Add the 2 teaspoons of honey into a small cup along with 1 teaspoon of boiling water. Stir well until thinned down into a runny syrup. -
Step 2
Pour the honey syrup from step 1 into a cocktail shaker along with the THREE BEES Honey Infused Gin, lemon juice and a large handful of ice. Shake well until the outside of the shaker feels really cold. -
Step 3
Double strain using a sieve into a cocktail or a coupe glass, then garnish with a slice of lemon or curled strip of lemon zest. To get a curl on the zest, wrap it tightly round a spoon handle.
